Viscosity describes the internal friction of a moving fluid and is a measure of it’s resistance to flow. It corresponds to the informal concept of “thickness”. Molasses has a much higher viscosity than water.

Cohesion controls how strongly particles hold each other together.  Fluids with high Viscosity like maple syrup should have high Cohesion and low Viscosity fluids like water will need low Cohesion to look realistic.
